Eggplants are very healthy, because they contain a lot of vitamin A, B1, B2, C and E, plus potassium, calcium, magnesium, iron and phosphorus, among others To take advantage of all of its healthy properties we present to you this simple but delicious recipe of eggplant parmesan.


Ingredients for 4 servings:
  • 2 eggplants large
  • 2 balls of mozzarella cheese
  • Tomato sauce
  • 2 fresh tomatoes or sun-dried tomatoes,
  • Extra virgin olive oil
  • Oregano
  • Basil
  • Salt

Preparation:

-Wash well the aubergines and cut them into thin slices. Place them on a tray and sprinkle with oregano, salt and a little oil.
-Takes it in the oven at 180°C for 20 minutes, or until golden brown.
-Once ready, begins to form the eggplant parmesan. First, place the eggplant, followed by tomato sauce, a slice of tomato and mozzarella cheese. Cover it with a layer of room tomato and elpolvoréa with grated parmesan and dried basil.
-Takes it in the oven at 180°C for 20 minutes or until the cheese broil.
